Fresh Italian Pasta with Ode to Sun Olive Oil

Ingredients:

  • 2 cups of all-purpose flour
  • 2 large eggs
  • 1/2 teaspoon salt
  • 1 tablespoon Ode to Sun Olive Oil
  • 1 cup of soft goat cheese
  • Zest of 1 large lemon
  • Salt and freshly ground black pepper to taste


Instructions:
1. Prepare the pasta dough: On a clean surface, make a well with the flour. Crack the eggs into the well and add the salt. Gradually mix the eggs into the flour using your fingers until a dough starts to form. If the dough is too dry, add a bit of water. If it's too sticky, add a little more flour.


2. Knead the dough: Knead the pasta dough for about 10 minutes until it becomes smooth and elastic. Wrap the dough in plastic wrap and let it rest for 30 minutes.


3. Roll and cut the pasta: Divide the dough into four equal parts. Using a rolling pin or pasta machine, roll out each piece of dough until it's thin. Cut the pasta into your desired shape (e.g., spaghetti, fettuccine).


4. Cook the pasta: Bring a large pot of salted water to a boil. Add the pasta and cook for 2-3 minutes, or until al dente. Drain the pasta, reserving some of the pasta water.


5. Finish the dish: In a large bowl, combine the cooked pasta, Ode to Sun Olive Oil, goat cheese, and lemon zest. Toss until the pasta is well coated. If needed, add some of the reserved pasta water to help the sauce coat the pasta. Season with salt and freshly ground black pepper to taste.
