Artichoke and Vegetable Pizza with Ode to Sun Olive Oil

Ingredients:
- 1 pre-made pizza dough
- 1 cup artichoke puree
- 2 medium carrots, thinly sliced
- 1 large onion, thinly sliced
- 1 bulb of fennel, thinly sliced
- 1 cup mozzarella cheese, shredded
- 1/2 cup ricotta cheese
- 2 tablespoons Ode to Sun Olive Oil, plus more for drizzling
- Salt and pepper to taste
Instructions:
1. Preheat the oven: Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven to heat.
2. Prepare the vegetables: In a pan over medium heat, add 1 tablespoon of Ode to Sun Olive Oil. Add the onions and cook until caramelized, about 10 minutes. Remove from the pan and set aside. In the same pan, add another tablespoon of olive oil and sauté the carrots and fennel until tender, about 7-8 minutes.
3. Prepare the pizza dough: Roll out the pizza dough on a floured surface to your desired thickness. If you're using a pizza stone, transfer the dough onto a piece of parchment paper for easy transfer onto the stone.
4. Assemble the pizza: Spread the artichoke puree evenly across the dough, leaving a small border for the crust. Sprinkle the shredded mozzarella over the puree. Distribute the caramelized onions, sautéed carrots, and fennel evenly over the cheese. Dollop spoonfuls of ricotta cheese across the top.
5. Bake the pizza: Transfer the pizza (with parchment paper if using) onto the preheated pizza stone or baking sheet. Bake for 12-15 minutes, or until the crust is golden and the cheese is bubbly and slightly browned.
